Gingerbread muffins

I posted this picture of these great muffins I made this weekend on my Facebook page.

And I got quite some questions about the ingredients & recipe, as it is in Dutch.

So I decided, why not translate as they are really tasty.

“Gingerbread” muffins

Ingredients (about 7 pieces)

100 g of almond flour
50g melted coconut oil or butter
50 grams of cane sugar or palm sugar
1 beaten egg
1 teaspoon baking soda
2 tsp mixed “gingerbread” spice*
60 grams of sugar-free almond paste
25 grams of almonds shavings

* The spice mix used in this recipe is very similar to gingerbread spice, which you can use. However, if you would like to use the original spice these are the ingredients:

10 grams of ground cloves
40 grams of cinnamon
pinch of cardamom powder
20 grams of grated nutmeg
Preheat the oven to 180 degrees Celsius.
Mix the almond flour with coconut oil, sugar, egg, spices and baking soda into a coherent mixture.
Fill the muffin cups with the mixture up to 3/4.
Press a piece of the almond paste in the middle of the muffin mixture and sprinkle a little of the almond shavings on top.

Bake roughly 15 minutes.
Cool and enjoy!
